If you stab their heart, they'll die pretty quickly since blood won't be able to flow properly. If you stab their spine, the nerves will end up even more damaged, making recovery impossible. If you stab their brain, it will also cause a ton more damage. If you stab a major vein or artery, it's like creating a blood clot, which is no good for that person.
