Depending on what you're wiling to accept, there may not even be particles, just manifestations of different vibrations (as in string theory), or excitations of everywhere-permeating fields (quantum field theory).
I am only going on theories that have been proven to fit observations here. Our best provable guess thus far involves the Standard Model, and all luminous matter is made up from different collections of quarks and leptons. And busy bosons are making things happen. Sure, we know it isn't the whole story (and it isn't as interesting as those modern ideas), but it serves most purposes.
