Oh... I peel almost everything. I know with this I take away most of the good stuff. But also the poison used. Over here, a lot of poison is used. We’ve grown far away from nature and want fruits and veggies to look beautiful (tastes rather poor).
I scrub them with very hot water first, but I absolutely get you. I know a lot of people who prefer to peel pretty much every thing. But especially with mashed potatoes, I leave the peel because I need every possible nutrient value I can scrape together considering I don't boil them in water, I boil them in broth, them whip them with a but of evaporated milk and a good deal of butter and a plenty of seasonings. So any claim to healthy I can keep, I have to take.

Going for hasselback potatoes (unpeeled!) tomorrow. This thread gave me an appetite! I’ll drink some wine with them. Kills at least a few of the bacterias. Right?!
