It’s “big cheese” or “head honcho”. Head cheese is a very gross food.

I really love head cheese, well the german equivalent Sülze, it's great with remoulade and roasted taters. Sülze is a general recipe of meat or vegetables in (sour) aspic and head cheese is named the usual brilliant german way of combined nouns: SchweinsKopfSülze (=PigHeadAspic) - geez... this makers me hungry and it's nearly two hours til lunch and my lunch is vegan... bummer
