Basically if they're on the same genealogical level as you their a first cousin. If they're a level above or below that becomes once removed. Examples are tricky in text, but let me give it a shot. If my mom'a brother has a kid that is my first cousin. If that kid had a baby, that's my first cousin once removed. If my mom's cousin had a child, that would be my second cousin, while my mom's cousin is my second cousin once removed. To get to a third cousin once removed, you would have to share a great great grand parent with your cousin, who is the mother/father of this new baby. Make sense?
