It's hinted that Thanos has some ability to control who gets snapped. Some.

That's why Dr. Strange goes all out with the magic when fighting Thanos. To make himself seem like a bigger threat to Thanos' plan than Tony.

It couldn't. Dr. Strange didn't select a reality where Tony was snapped.

Thanos does have control over who get's removed and who stays. He specifically promised Tony that half of humanity would survive, implying that whole species could just get wiped out. Thanos also promised Strange that he wouldn't kill Tony if he gave him the stone. It would be kinda shitty if Thanos spared Tony, only to kill him in the resulting snap.

In a huge number of realities Thanos would kill both Tony and Strange and laugh about it as he went to dinner. But, I know, in order to have a future movie we have to assume that Thanos abides by his promises. Because all Marvel villains abide by their promises.

Technically its never stated in MCU that groot is the last of the flora colossus. In the comics there are many of that species and groot isn't unique and there hasn't been anything in any of the movies to contradict this.
