It's more than just that. The company that sets the meanings of emojis and symbols, Unicode advised Apple against this as it will change the meaning of archived communications that used the old emojis. This could alter court cases etc. This from Business Insider's Rob Price, “Apple is tampering with the meaning of hundreds of millions of old messages, documents, and private communications to score a political point, and that might not be a precedent we want to set.”
I think the reason people are bothered is that a huge company is showing clear political bias (because this change is either a pro gun control thing or a political correctness thing). It doesnt really matter because its an emoji, but politics is so big right now that its a huge statement by apple/emoji
Anyone writing legally significant statements using emojis should see a doctor and eventually be put under tutelage. And anyone who feels this is a big deal should re-evaluate their priorities, and then be happy they have nothing to bother at all.
