Unless you sacrifice some of your stamina, but yes. Though you can use recipes to give you the extra yellow hearts!
Did you go pick up the new outfit you get for completing all the shrines?

Also, no, I got the message from the great fairy that I 'have enough power' like when I maxed out my stamina. I don't think I can even sacrifice stamina for more hearts.

Huh, that's interesting. Granted, I can't say I've tried to increase my hearts more because it's so easy to get the extra yellows.
Farming the dragon parts and star pieces are the hardest part of upgrading that set, but if you know the places to wait, it's not so bad. Just some annoying grinding.

Not really. You can get pretty close to the each of the dragons if you're in the right spot!
For the red dragon Dinraal, head to the Tabantha stable near the bridge across the canyon around 6am. He'll pass right underneath you and you can jump off and shoot him in midair.
For Naydra, you can hang out around the East Lanayru gate (take out the Lyonel there) around 7am and climb the hills next to the gate to jump off and shoot. Or head over to Lanayru Bay and climb the hill over the tunnel with luminous stones on the north side of the bay. Naydra appears there around 6pm.
There are also two great spots for Farosh. At Lake Hylia Bridge (South end), fly down from the nearby Lake Tower to the parapets at the end of the bridge around midnight, and Farosh will fly right past. Just float over to him. Between 6-8pm, he tends to appear over Floria Bridge next to Lakeside Stable.

Haha, that's why I suggested getting close, especially for the fangs and claws. You get right up close and personal in those spots. Enough that it's wise to use some resistance potions, or wear element-protective gear.
Hmm, for acorns I'd suggest heading to the forest on the south end of Hyrule field and chopping down trees. The extra wood is also helpful for building Tarrey Town in Akkala.
(have I played this game way too much? Probably. BotW and Skyrim both)

Already have Tarrey town, and turns out the Sage Temple Ruins, almost west of central tower have these giant trees surrounded by acorns.

You'll also need honeycomb and energetic rhino beetles, iirc. The beetles can be found in Lurelin village at night. Just throw on your Sheika armor for extra sneakiness so they don't fly away
