There's two different types. Astringent and non-astringent. Astringent ones you have to wait until they're soft and squishy or they'll taste bitter but non-astringent ones you can eat whilst they're still firm.

And no I didn't eat the skin. I do like carrots but I just didn't think that my fruit would taste like a root vegetable.
