I think Joseph himself actually addressed this. Tom, being the romantic that he is, fell in love with the idea of Summer, not her exactly. He was the selfish one. She was always honest about not wanting a serious relationship, until she found her 'one'. You would all do the same thing.
As it's said in the start of the movie, it's a story about love, not a love story.
PS: this may very well be my favorite movie.
