Australia's is a kangaroo. 'Ain't never seen a kangaroo either. Canada has the maple leaf. In nature falling leaves tend to fly in one general direction which would not bode well if you wanted to draw some sort of aviational inspiration from it.

It is to symbolize the endurance and percevereance of the RNZAF because the Kiwi is incapable of walking backwards.
