The whole reason Fiona turned into an ogre is because she was supposed to marry Prince Charming. Since shrek kissed her the spell reversed and instead of a princess she is an ogre.

No. The spell says,
"Take true loves true form"
She would turn into the form of Shrek (an ogre) because he is her true love.
