Two things
1. More people wanting gluten free things actually helps widen the market of gluten free things because of supply and demand
2. It actually harms you if you do the gluten free thing and aren't intolerance to it.

My father is gluten intolerant and the abundance of gluten free things has increased ten fold since he was diagnosed.
I actually knew someone who went on a gluten free diet (for some reason...) and they stopped having migraines. I don't know what happened, but that is all they've said. No migraines. Period.
FYI, 90% of the population has some sort of intolerance to gluten, they just don't know they do. There's nothing wrong eating gluten free if you don't have a full blown intolerance to it. It's healthier anyway and it does allow the gluten free market to grow
