Although I also place myself within this category, it is interesting to see stories of people who've had experiences their horoscope has predicted.
Although, the horoscope and predictions for signs are so broad and vague that it is very, very likely that someone that reads theirs will find some correlation between it and their lives so it fits. Personally, I think that star signs and things have only played to the human talent of making these correlations and connecting events so well it fits perfectly into the scenario explained.
