Doesn't even have to be water. It could be soda or iced tea where the ice melted and it's all watered down. I now keep a couple of those little gatorades by the bed.
I clearly have a hydration issue.

Get checked for diabetes. I'm diabetic and when blood sugar high get thirsty.

Wouldn't blood sugar drop during the night? Assuming he doesn't sleep walk and eats the contents of the cookie jar?

No. Need long acting insulin. Your body releases glucose from food through out the day. That's why low gi foods are better for you
