Because colours have different significations, especially in animations made for children. Lime green is mostly either for doom, death and poison (evil guys). You will find the use of lime green in many other films to represent bad guys' magic. Other nuances of green are for nature or innocence (Peter Pan, Tinkerbell)
Purple is also a colour for nasty / sexy / magic-ish characters (Esmeralda, Maleficient)
Blue is obviously for water, sky and air, but also for nice and smart people (Merlin, Kida in Atlantis...)
Yellow is for the sun and light, but also for pretentiousness and pride. (Miguel in Eldorado)
Pink for kind, sweet and shy (Pigley)
And so and on... it's not an exact science, but it's what people working in entertainment are taught. :)
