Because Security Cameras are constantly filming. And recording in a high quality for a long period of time would take up an insane amount of space. For instance, a 2 hour, 1080p recording from my webcam was over 3 gigabytes.

Actually, most security cameras are still analog, limiting the resolution. IP cameras are just now gaining popularity, with prices dropping and NVRs available to record automatically without someone sitting and constantly monitoring a computer.

It's a bit like with UFO sightings. Given that most of us now have the capability of photographing anything at any time (well pretty much), why aren't there loads of really good and recently taken photos of flying saucers??

Because they're all fake, and if the quality was good, it would be obvious.
