Because they know they have to work for success.(Just in case, I don't mean that as an insult.) And that they can't get away with serving shit like some chain restaurants.
I've found that to be true here in the States too. Some of the best food I've eaten has been from some of the sketchiest dives. Doesn't matter what kind of food it is, chain restaurants all suck.
Sadly true... but hey there´s always this old ma'am that brings food and sell it outside the school, so we help other people and get great food like tamales or stuff
