Ate we supposed to believe those muffin tins produced perfect spheres of admittedly lovely cake dots?

They could be spherical ice moulds, or possibly the spheres are two halves put together.

soooo much sugar in them. They dont easily dry out...

Cake dries out when you cook it. Sugar doesn't prevent baked goods from drying.
