One takes still images which aren't stored for long, the other takes video for hours on end and stores it for long term.

The roller coasters use a Strobe Flash lighting System. Flashes of light occur when the the camera is triggered so it seems as if the action has been "frozen" in time. The idea was originally used to take photographs in Ice Hockey games, and the system was extended to fun parks. The system used is large and bulky. Cameras used by banks are pinhole cameras, small and light and thus cheap.
