FIRST
You have to let it sit for about an hour and a half outside the cold to get it cutable. That or have a hot knife or a wire.

Yup. Always serve cheese at room temp, whether it's a hard or soft cheese.

Depends on the cheese. Most I'd say knife wins.

Indeed. Also, use a garrote (piano wire is fine) tied to two bits of wood to just cut it... much more effective.
