Seems like that finish would be fairly delicate and get messed up as soon as you use the knife. That's what's happened to every coated blade I've ever seen. Just use bare high-carbon steel and keep it clean and oiled.

I knew a bulldog that spent the first year of life in a cage 23 hours a day, and because of that had no idea how to socialize with anyone, including other dogs, poor guy was stir crazy. He was rescued from that situation, but went to someone who couldn't handle his unique psychological needs. This person put the dog down instead of returning him to the adoption agency. I'm still mad at that person. Moral: Take care to understand the responsibilities of pet ownership BEFORE signing up.
