People can eat edible flowers dishes as commonly in China as consuming vegetables. One reason for this is that in Europe, Lettuce is more vastly grown and sold at a lower price than edible flowers. Another reason for this is that the chefs here in Europe does not have the expertise to prepare the flower dishes, making it a rarity at an unaffordable price for the average citizen
