First season isn't as great as the later parts, but it's still a fun watch. The later series all start picking up the pace and go wacky and extreme real quickly. Watching how characters contort their powers to adapt and overcome is amazing, and Joseph Joestar is probably the prime example of why it's fun to watch and read Jojo's. He is literally a magician pulling rabbits out of his hat when you least expect it to happen, but I'm not saying it's a trait exclusive to the good guys, plenty of villains have one-ups and well thought out methods of attacking and overwhelming their opponents. It gets to a point where enemies are literally playing mind games in order to get an edge over each other rather than brute force their way through.

I feel like his ending fight was handled better mechanically than DIO's in Stardust though. It just felt like they had a way to win, they just needed to figure it out in time before he pulled out his trump card.

You can start pretty much on any of the parts 1-3, 4 is where older characters can tie in, but it only spoils a couple of things you would've learned in the previous parts. In short, I would start off with either Battle Tendency (Part 2), or Stardust Crusaders (Part 3), the Phantom Blood (Part 1) is probably the weaker of the lot, despite being the starting point. I have a soft spot for Battle Tendency because it's amazing, the wackiest of the lot and that's saying something. Diamond is Unbreakable is the most recent part, and it has a colorful and distinct scheme running throughout it, and doesn't have any bad parts to it (that I noticed).
