IT'S LEARNING TIME.
The reason there are so many things in the movies that aren't in the original published version of the Hobbit is because Tolkien was rewriting it, but it never made it to the final draft because he died. Peter Jackson was given permission to use Tolkien's notes in order to make the Hobbit movies how they would have been had the new Hobbit book/s ever made it to the shelves.
