The book "Don't Sleep, There Are Snakes" describes some of the processes as a missionary/linguist went to live with a tribe where neither of them spoke each other's languages. There's a lot of extensive note taking and testing out theories of whether something meant what he thought it meant by using it in different contexts and so on.
