Sumo Wrestlers (though they don't get away from their health problems absolutely scotch free either, the OP is right but not completely). The obesity problem is in part because the fat is everywhere on their body, even their organs. Sumó wrestlers, grand size though they be, have a separation of fat on their body, laying really only just under the skin and on /top/ not in or with muscle.
Tl;dr sumo wrestler fat is separated, obese whiny babies have it everywhere.

But I also imagine since it is the American school and only purebloods are allowed to reproduce with each other, then the population could actually be small enough that Livermorny would be around the size of a university campus.
