Hmm, someone should really just look at the science behind this instead of making something up. It's really because when you sleep your brain disconnects the control between your conscious mind and your ability to move your body. This keeps you from moving while you dream but still allowing you to move in your dreams. Its also why some people wake up and are paralyzed for a bit before their brain kicks in and realizes its made mistake and allows you to move. The jerking happens when your brain hasn't shut off your control completely yet and thus allows partial movement. There is no proof of any life threatening issues behind the jerking. It is fun however to scare people by telling them that though.
I think you're right, but there is a grain of truth to this. It's not the jerking that's the result of your heart slowing to an unsafe point, it's the feeling of falling which might or might not result in a jerk.
