It's not gravity alone, yes. There's physics. Water tension. Bla bla bla
But gravity does play a big part. Without gravity...

Gravity is there, but you aren't pouring the liquid fast enough for it to let go of the cup.

Gravity has some to do with it but surface tension keeps it connected to the liquid and glass
