Ramsey knows how to talk to kids because he addresses the children of others as he would like others to address his children. He gives encouragement because he knows that sometimes a nice word or sentence can turn someone around. He does it on Hell's Kitchen and his other shows. Granted not often, but you do see his softer side.
He's done some bad things sure, who hasn't, but he knows when to yell and when to encourage. He's always had a soft spot for kids.
He acts like a douche on hells kitchen cause the contestants need to be able to handle extreme stress in order to win. He doesn't act like a douche unless the situation demands it
He goes from "WHAT ARE YOU?!" "An idiot sandwich chef Ramsey"

I actually love Gordon Ramsey. He's strict when it's important for people like in Hell's Kitchen to realise the severity of working in intense surroundings... but then he's all loveable and kind and a big teddy bear with kids. He's great.
