Guys. One of these is not like the others. As a person who grew up eating hot food every freaking day, trust me, you do NOT want to have a teaspoon of sugar after eating hot food.
The reason it works is because most spice is oil based. Bread will help soak up the oil and the fat in milk will neutralize some of the oil (because they're both oils technically).
If you're out of milk or whatever, butter also works quite well to neutralize the burn from hot peppers. I have family in Nola, where cayenne pepper is used in everything, and this is their go to for calming the fire.
