from what little i see hes only mean to the people trying to be professionals who are not doing a professional job... him telling some lady she made a good lasagna for her family is like an art critic noticing your kid did a good job staying in the lines.
He's actually extremely nice. He only gets pissed because the people on Hell's Kitchen, Kitchen Nightmares, etc are supposedly professionals and they're making garbage. It motivates them to do better.
But also children he doesn't know very much
