They could sue if it was libel, but otehrwise they just lost a customer. Cuz they look like shady ass people if you don't bother changing your hotel due to the review, but you will fine people then I might as well go to a better hotel.

If it was in the contract they signed they can sue for whatever they want. Except in California where that shit's illegal.

I think if there's anything extraordinary in a terms and conditions agreement then it can't be held against the signer.
