Actually this was used to signal the "help" what you needed or thought on the food, instead of stopping conversation to speak to the "lower class". There was also ways to tell them if you needed more drink or didn't. Also if you wanted more bread or butter. There was alot of ways to talk to the help without talking to them.
You must be a resident of the U.K., then, or on the upper esscelons of society (such as myself). I assure you, very few people in the United States that I know are aware than the 'pause' and 'finish' positions actually exist at all.
