It's just your heart rate slowing down so quickly that your brain thinks you're dying. I'm not sure if waking up would do anything to stop you from actually dying.
That's why sometimes you kick in your sleep and it wakes you up. Demons are trying to grab your legs and drag you down to hell.

Story time : I don't like sleeping on my back (because of paranoid reasons) this is important. Everytime this feeling of falling happens I wake up on my back and I can't breath, I have a freaking big weight on my chest.
It's fucking scary to me
Actually, that happens when your body falls asleep faster than your brain. You're conscious and awake when it happens since your brain is still active, and doesn't recognize that the body has fallen asleep.
The feeling of falling stems from losing control of your muscles as they sleep and relax, and the brain mistakes it for falling, so you immediately jolt right back up.
This is actually your brain pretty much thinking you're way too calm. Like, your heart rate is so slow that it thinks you're dying or not getting enough oxygen so it jolts you up to get it pumping more blood. Cute sentiment, but I would hope angels aren't that clumsy.
