Well rice isn't the only thing they eat and it's more of a cash crop and can only be grown in south china. The first people in china probably killed some animal and pikes up two sticks to eat it with and the tradition stuck.

If I remember correctly, the chopstick used to be about three feet long, used to move hot coals from the fire to other places, such as under beds, under ceramic foods and other whatnots. Someone had the great idea of using it to pick up food, then shortened them to about 12 inches to be more...versatile.

The Chinese emperor was a friad that normal eating utensils could be used to murder him, so he made everyone used chopstick instead.

It's because Confucius believed that the metal utensils, particularly the knife, were representative of violence, and that the two wooden sticks were more peaceful and humble. He ate with nothing but chopsticks his entire life, and all of his followers did similarly. Eventually they just became the official utensils of China.
