It's so the crust doesn't come out all shotty

Moisture from the water seeps into the crust so its not hard and painful

Looks like deep dish... and not any deep dish, but Extreme Chicago Deeeeeep Dish.

It's not helping that it's lunchtime and I'm hungry either. I was going to get a sub, but pizza sounds amazing...
