Actually, there's a severe shortage of tradesmen in America right now. Learning a trade is a fine way to make a living and a perfectly respectable option. (I say this as someone who took STEM to the PhD level)

It stand for Science Technology Engineering and Mathematics I think they use these curriculums so you can choose from of those courses or something.
