The reason he lived-- as you can see if you look close enough- was because his brain had been partially severed rather than completely! A chickens brain rests further into the back of its head, so all that really was affected brain wise was his cognitive abilities

The cut also missed the jugular, so he didn't bleed out. The farmer who had intended to have him for dinner ended up taking care of him, feeding him with a dropper and small corn pellets
