Because the constant killing is parted between different species. Also most of those animals are bred to be eaten, they don't just go extinct.

How would we, no one counts them.
But altogether 60 billion of livestock are killed annually, if you're curious.
I think it's just been shortened, what they meant was animals being actively slaughtered.
