There actually is gravity in space. Orbits are achieved by going fast enough laterally that as you fall you miss the planet.

One thing I don't get though is in The Last Jedi, when Snoke's ship is firing in the last 3 ships, the laser fire arches downward like a bullet going down range. I don't think they were in the gravity field of the rebel planet.
