Pitchforks often have 4 prongs. Tridents have only 3 and often have bladelike edges on the prongs. They were also used historically for fishing so a much closer comparison is to that of a fishing gig than a pitch fork. Pitch forks are also flimsy and made of rather thin metal while a trident is made thick and dense to survive high force contact with bones and rock.
