I’ve had several jobs that didn’t just do this- but they actually as part of the hiring process had you either observe or actually work the job supervised for a day. Usually these were jobs that require a high level of training and also had a high initial turn over for new hires who’s expectations didn’t line up with the job (like an analyst position I once had which they stressed repeatedly how boring it was, and had many people quit within the first day or so upon discovering how truly complicated and boring it was.) The saving grace though is that at least if you got to that point there wasn’t a chance you didn’t have the job if you wanted it. The worst though were a government job I once interviewed for which had 3 skills tests as part of the application (2 1 hour tests and 1 3 hour) with the top 3 scorers getting to the interview which was 3 interviews (2 1 on 1 and 1 in front of a panel.) and a large and well known tech company which took months of phone and in person interviews.
