When flying planes and dog fighting, I tip my head to level out and know where the ground is at.

It’s ok. Adults do this too. Jet fighter pilots who do airshows will “walk” their routine before hand- literally moving their bodies pretending to both be the plane and fly the plane through the choreography. Race car drivers, motorcyclists, martial artists- while talking about or thinking about atoutine or remembering back or telling a story will often do this as well. Your mind and body are making a connection and reacting the way they know how. It’s an instinct and part of becoming good at any motor skill is in fact instinct. Dancers and musicians often feign movements to music or Keep beat with some part of their body intuitively. And in games? It CAN actually make you go faster in both that one is usually able to do a thing best when following instinct- provided that instinct had been sculpted to be constructive to the situation, and part of being fast in games or on a machine is visualization. Seeing and react before the thing.
