This is likely to be exceptionally high grade gourmet artisanal chocolate that has been highly tempered. Good, quality, real chocolate that is ALSO made well, goes through a process called tempering.
This is done by repeatedly heating it to a specific temperature, then cooling the chocolate to a specific temperature... with different temperatures at different stages. This is done in order to get the cocoa butter crystals to be uniform and when done right, can raise the melting temperature to just about that of the human body.
