It is incredible information overload to get into all the fan AUs, yeah. If I didn't already know a majority of the popular ones, I jsut kinda wouldn't bother.
There's already fan comics of Deltarune. Not many, but there certainly are some. There's a really good series called "Paper Trails" on Tumblr (because of course it's on Tumblr).

I love Undertale. I'm not as present in the fandom anymore, but i still spectate it from time to time. Even to this day, I regularly think about it. I can't wait for the other chapters of Deltarune.
