That would actually be amazing! I'd love to watch lost episodes. Smitty you should take over DVD management or whatever it's called over at the BBC. XD
Since this has popped back up in my "feed," here's a supplemental idea I'd like to add to this. Your subscription fee doesn't just buy the rediscovered episodes, it helps to fund the locating and restoration of them.
You should definitely watch the classics, it will give a context to many things that happen later on.
However with that said, if you want, you should be able to get away with jumping right in and watching the "reborn" series that began back in 2005 with Christopher Eccleston. They are written and presented in such a way that isn't (to my mind) exclusionary to those who haven't watched the classics.

Always give each new Doctor a chance. They are always good, just in their own way.
Have tissues handy by (new) season 2.

I jumped into the reborn series... I guess when I'm done with that on Netflix I'll start on the classics.......*You should really invest in a big ole pack of Kleenex*
I guess my definition of classic differs from yours. I think of the episodes since 2005 to now as being the modern series(Doctors 9 through 12/13), and the "originals" from 1963 to 1989 as the classics. (Doctors 1 through 7)
The 1996 tv movie (Doctor 8) is kinda pretended to have not happened.
I just learned something new today. Christopher Lloyd was considered and auditioned for the role of the Master for the TV movie.

He wanted more money than the producers were ready to give him and he passed on the role. Here's the kicker: they wound up shelling out even more than Lloyd's asking rate for whoever the putz was they did cast.
As I mentioned above, the reborn series is an ok place to get started. You don't need to have watched the classics.

A buddy of mine encouraged me to start and binge watched Buffy and Angel with me, on the condition we also watch Babylon 5. When we finished those 17 seasons... we asked each other what's next? We joked Doctor Who. All of it.
