Most cats have about 4-5 kittens in a litter (only 1 labor per pregnancy, which can take a few hours to deliver all the kittens).
Giving birth to only 1 kitten is not common, but possible. My cat was an "only child", she was much bigger than the average newborn kitten. And of course a million times cuter because she is mine. =)
