Now, not all of them do come true, but this one did and therefore it became a necessary and locked in event in time. There is a prophecy involved in the third book, but it has nothing to do with Buckbeak and Sirius. They can be saved without a hitch because it is not a fixed point in time and it isn't necessary to leave them dead.
