Why is it so pointy? Mines usually just looks like a bunch of layers of frozen water droplets

Dry air vs moist air is the first thing that comes to mind. Dry air has much less moisture (obviously) so the hexagonal crystal shape of ice feathers takes form easier as opposed to moist air which simply makes a covering of solid ice.
